
2:00 AM Hillbilly "Whatever’s Left" Casserole
Ingredients:
- 1 package of hot dogs
- 2 cups leftover mashed potatoes
- 1 can baked beans
- 1 cup shredded cheese
- ½ onion, chopped
- 2 slices of bacon—or 6 if you ain't worried about tomorrow
- 2 tablespoons BBQ sauce
- A handful of crushed potato chips
- Salt & pepper
- Optional: Pickles, because somebody always has pickles
Directions:
- Preheat the oven to 375°—assuming you remember where the oven knob is.
- Chop up the hot dogs and onion. Don't worry about making 'em pretty. Nobody's judging a 2 AM hot dog.
- Throw the hot dogs, onion, and bacon into a skillet and cook until the bacon looks like you made a good decision.
- Dump the baked beans into a casserole dish.
- Spread the mashed potatoes on top. If they're lumpy, call it "rustic."
- Add the hot dog mixture.
- Drizzle BBQ sauce over everything.
- Cover the whole mess with shredded cheese.
- Sprinkle crushed potato chips on top for fancy hillbilly crunch.
- Bake for about 20 minutes, or until the cheese is melted and you can smell it from the couch.
- Remove from the oven, let it cool for approximately 14 seconds, and dig in.
Serving suggestion:
Eat directly from the casserole dish while standing in front of the refrigerator, wearing pajama pants and wondering why you didn't just eat cereal.
Hillbilly cooking rule:
If it fits in the pan and you can cover it with cheese, it's a casserole.
