Skeeter’s 2:30 AM Hillbilly Kitchen

The Redneck Chicken Coop Pizza Sub

Also known as “The Cluckin’ Pepperoni Belly Buster!”

It's in the mornin', and welcome back to Skeeter's Hillbilly Kitchen, where we ain't got no fancy culinary degree, but we DO have an air fryer, a questionable grocery budget, and a smoke detector that doubles as a dinner bell!

Tonight we're makin' something so fancy, my cousin Earl put on his good overalls just to eat it!

It's called the Redneck Chicken Coop Pizza Sub!

Now, this here recipe combines chicken fingers, pepperoni, pizza sauce, and enough cheese to make a Wisconsin dairy farmer stand up and salute!

Ingredients

  • 8 frozen chicken fingers
  • 4 hot dog buns
  • 3 ounces of pepperoni
  • ½ cup pizza sauce
  • 1½ cups shredded mozzarella cheese
  • 1 tablespoon melted butter
  • ½ teaspoon garlic powder
  • ½ teaspoon parsley
  • Optional: Hot sauce, if your stomach ain't suffered enough this week!

Step 1: Wake Up the Chickens!

First, grab them frozen chicken fingers outta the freezer.

Throw 'em in the air fryer and cook according to the package directions until they're crispy and fully cooked.

Now, my cousin Earl asked me if chicken fingers actually come from chickens.

I told him, "Earl, have you EVER seen a chicken with fingers?"

He said, "Nope, but I ain't never seen one wearin' shoes neither!"

That's why Earl ain't allowed to operate heavy machinery anymore.

Step 2: Prepare the Bread!

Grab 4 hot dog buns.

Now, these ain't fancy submarine sandwich rolls. We're usin' hot dog buns because they're cheaper, and quite frankly, they ain't got nothin' else to do since we ran outta hot dogs Tuesday.

Open them buns up and line the insides with pepperoni.

Spread some pizza sauce over that pepperoni.

If you get sauce on your shirt, don't worry. That's what we call a hillbilly napkin!

Step 3: Stuff That Rascal!

Sprinkle some mozzarella cheese inside each bun.

Then shove 2 cooked chicken fingers in there.

Add some more pizza sauce.

Now, if your bun starts splittin' open, don't panic!

That's just the sandwich tellin' you it's reached maximum occupancy!

My Uncle Junior had the same problem with his pants at Thanksgiving.

Step 4: Give It the Fancy Treatment!

Mix your melted butter, garlic powder, and parsley together.

Brush that mixture over the buns.

Now sprinkle the rest of your mozzarella on top, followed by the remaining pepperoni.

That parsley is important because it's the only green thing anybody in our family has eaten since Easter!

Step 5: Fire Up the Air Fryer Again!

Put them loaded sandwiches back in the air fryer at 375 degrees for about 4 to 5 minutes.

You want the cheese melted and the buns lightly toasted.

Keep an eye on 'em because there's a fine line between golden brown and callin' the volunteer fire department!

Step 6: Time to Eat!

Pull them beauties out, let 'em cool just enough so you don't burn the roof of your mouth, and grab yourself a cold drink.

Now, the proper way to eat one of these is standin' barefoot in the kitchen, wearin' your pajamas, with the refrigerator door wide open.

And if somebody asks what you're eatin', tell 'em it's an Italian-inspired, poultry-based, artisan bread creation!

That's fancy talk for chicken fingers shoved in a hot dog bun!

And remember, folks, here at Skeeter's 2:30 AM Hillbilly Kitchen...

We don't count calories, we don't measure portions, and if the smoke detector ain't hollerin', we figure supper ain't done yet!
